Mirror Glaze Mirror glaze on cakes is popular. You know it's a latest trend. This glaze is prepared with chocolate and gelatin which gives a distinctive shine like mirror. But I have NOT used gelatin here, instead I used Agar Agar powder. The chocolate is usually colored to make it attractive. It's slimy, sticky covering for the cakes. The galaxy cakes looks for real. So when I posted photos on Facebook many friends has asked for the recipe. Mirror glaze is usually done on mousse, entremets and pastries. One has to use best quality chocolate for the shine and that makes it delicious. This settles best on frozen or chilled cakes. That's why people prefer it on mousse or buttercream cakes. Believe me I initially tried it on whipped cream cake. It worked well but I could not give two separate colors which I intended to and my finish for the cake was not good. But now I am loving this method of frosting as it is fast and simple. Here I have used the glaze over chocolate sponge and milk chocolate(semisweet) mousse. The mousse also does not contain any egg or gelatin. I will post the chocolate mousse recipe separately. As I told you I have replaced gelatin with Agar Agar powder. I have made jellies before using agar agar powder. You have to first understand how to use Agar Agar. Agar Agar and gelatin works differently. I researched, saw few video's over and then I made this. The previous ones I made was only with two colors. But this one I thoroughly enjoyed playing with colors. I used dark blue( Blue and black), light blue, purple, white and Pink.
For this glaze you will need 9inch chilled, Freezed cake. 1 Sheet pan or big flat pan which can hold the 9 inch cake. 1 small bowl to hold the cake. Make sure your cake board is exactly same size with the cake so that when the glaze is poured it runs smoothly. Ingredients:-
Recipe- Make sure your cake is chilled. Measure ingredients and keep ready. In 1/4 cup+ 1/2 tablespoon of water add Agar agar powder and mix well. In a thick bottom pan take remaining water, sugar and condensed milk and mix well. Put it on gas on medium heat, add the soaked agar agar. Add before the sugar solution gets heated. Keep cooking stirring continuously till the the agar agar powder dissolves completely. To check dip a spoon in it and run your finger on it, If its grainy you need to cook till it dissolves. Once done switch off the gas. Keep stirring. Add white chocolate. Stir till chocolate melts and it becomes nice smooth batter.(mixture) Now strain the batter with strainer. Divid batter into 5 bowls. I took 3 big bowls and 2 smaller. In one bowl I mixed 1 drop of black and 2-3 drops of blue. In one bowl I mixed 1 drop of white and 3 drops of blue. In 1 bowl I mixed purple color. The smaller two bowls add pink in 1 and white color in other bowl. In a big sheet pan put a bowl to elevate the cake. Place chilled cake over it. Or if you have a wire gauze use that. Stir all the colors nicely. Keep stirring till the colored chocolate comes to room temperature. Test it with thermometer. It should be 37F or 90C. Mix the colored glaze in a bowl. DO Not stir, Pour the batter on the cake gently, slowly covering the whole cake. Let it settle for 15-20min. On a brush take white color and splash on the glazed cake to give it a starry look. Once it stops dripping, clear all the drips and put it in fridge.
