Beetroot Barfi When I was making it for the first time, my children asked me what are you doing? I said Beetroot barfi, they were surprised. "Oh come on mummy you are making it just to feed us Beetroot?". I told them don't think this way just try and let me know. And sure enough they loved it. Barfi was finished in no time. Beetroot barfi tastes not only delicious, the colour for this barfi is also gorgeous. It tastes like coconut-khoya barfi. I have used wet coconut, but you can use dry coconut(khobra) too. I have tried beetroot thepla (recipe on the blog), beetroot salad and beetroot barfi. Although I do not have sweet tooth I love this barfi. Ingredients-
Grease a plate with ghee, keep it aside. Cut almonds in long thin pieces. Keep it aside. In a thick pan take grated beetroot and saute it for 3-4 mins till tender. Now add grated coconut followed by milk and sugar. let this boil stirring frequently to prevent it sticking to the bottom. Once it starts to thicken add milk powder. Cook further stirring continuously. Add cardamom powder and mix well. Cook till it becomes thick and comes together as a ball. When it starts leaving the pan, switch off the gas. Immediately Spread the barfi on greased plate. Garnish with almond pieces on it. Press the almond pieces gently to stick to the barfi. Let it cool. Cut the barfi in square or diamond shape. This stays fresh for a week.
